Simapa is an agro-industrial company that belongs to a group of companies with more than 25 years in agriculture. Its activity is oriented towards the transformation and export of condiments: Capers, Caperberries as well as other vegetable products specific to the region.
The caper brush, whose scientific name is "CAPPARIS SPINOSA" is a wild plant that grows in the Mediterranean regions. Its shrub measures 50 to 80 cm in height and 1 cm in width when the branches grow longer.
The fertilized flowers produce fruits called caperberries which are first green, then turn progressively to dark red. They should be picked between May and August, they are harvested in the morning, before their dehydration. Few hours after being handpicked, they are directly transported to the industrial unit so that they keep their green color, their freshness, and their flavour.
